Made from the cooked juice, or 'must', of the Trebbiano white wine grape, and then acetified and aged in a series of barrels of oak, cherry, chestnut, mulberry, and finally, juniper for three years, Cavalli Balsamic is totally unlike grocery store vinegars.
With a thick, plum-like sweetness, and aromatic complex finish, this vinegar can be added to salads, drizzled over cooked vegetables, or used on cooked dishes just before serving.
Try with cheese, in savory sauces, and for finishing roast chicken.
