Tagliardi are Cipriani's version of the pasta cut "Maltagliati," or "poorly cut." They are little squares of pasta, a little larger than 1 x 1 inch, that are thin and delicate.
Although the cut is a versatile shape, We recommend using with a light sauce, or perhaps just butter and Parmigiano, or olive oil and Parmigiano. We served it with a side of sweet sausage. These are also good with a sauce with finely diced meat, such as a finely diced prosciutto. Other flavor pairings include mushrooms, especially porcini, and beans such as chick peas and borlotti.
