De Cam's Oude Lambiek is a blend of unpasteurized 3-year-old lambics specially selected by brewer/blender Karel Goddeau for their character and roundness, blended and then aged in 100-year old vats. The beer pours without a head, in fact, with only a light sparkle, and should be chilled and enjoyed like a fine white wine but prized for the wonderful, rare, spontaneously fermented Belgian Ale that it is.
De Oude Cam is an old brewery of the former lords of Gooik. In the nineties of the twentieth century, a community center was established here, including a folk café and a musical instrument museum. Willem Van Herreweghen, son of the poet Hubert and at that time production director at Palm, set up a Gueuze blending here in the outbuildings in 1992. In 1997, the first locally docked gueuze was presented. Wort is purchased from Boon, Girardin and Lindemans lambic breweries. This undergoes a spontaneous fermentation in Gooik. The young lambic obtained in this way ripens further in barrels from Pilsner Urquell. Lambic of different ages is then blended, after which the beer is fermented in the bottle for at least another year. The slow, artisanal production method produces 100 hectoliters of Oude Geuze and Oude Kriek annually.
