How to Get It
Our Aged Pecorino Pepato is a pasteurized sheep's milk cheese dotted with black peppercorn throughout the paste. The cheese is aged for about 6 months during which it develops a flaky yet creamy consistency. The salty, tangy flavors complemented by the spicy peppercorns make this cheese a great table cheese. Adds delicious complexity when shaved over pasta dishes, salads, or fresh beans like fava. Try grating over polenta or atop risotto for a comforting dish. Originally from Sicily, Pecorino Pepato is now also made in Sardinia, Italy, as well.
