Quinces are classified as stone fruits and thus closely related to apples and pears. In this country the hard and tart fruit is usually not eaten raw. As jelly, however, it is its distinctive sweetness that it so special about it. That is why chefs like to combine it with strong cheeses, such as goat cheese or Gorgonzola.
